an energizing breakfast

For breakfast about once a week, we’ll have homemade egg sandwiches. For me, this is a great way to spice up my breakfast from my usual oatmeal (mmm..with Maranatha peanut butter!). And, they are delicious + super simple. My grandma always said an egg is a great way to start off the day :)

What we use: whole-wheat English muffins, cage-free organic eggs, cheese (Cheddar, Monterrey Jack, Pepper Jack, Muenster..the possibilities are endless! Use your fav.), and Canadian bacon. Sometimes I’ll add on a slice of tomato (my friend Sara just bought some Heirloom tomatoes..so pretty and delightful!) and a few spinach leaves.

What to do: Spray a skillet with cooking spray, and fry up one egg per person, along with 1-2 rounds of Canadian Bacon (ours comes in rounds, some brands may come in strips). Meanwhile, toast up the English muffins. When the eggs, Canadian bacon, and English muffins are done, pile the eggs & Canadian bacon onto the muffins, and place 1 slice of cheese (or 2 smaller slices if using block cheese) on top, and let the cheese melt (add on tomato/spinach if using). Enjoy with a piece of fruit!
