It has been a week of delicious dinners! With my brother off at West Point, my dad and I have had a chance to try some new recipes, along with make some favorite vegetarian recipes (Andy is very partial to meat). When we try a new recipe, there are really no requirements other than it has to be simple. No fussy recipes! And simple can be delicious, too! Here’s what we had this week:

Tuesday: Chicken Tacos

Wednesday: Leftovers, a.k.a. taco bowls.
Thursday: White Bean Asparagus Salad over Couscous
Our new vegetarian recipe of the week from Clean Eating Magazine.
Friday: Babysitting night, so I packed Leftover White Bean Asparagus Salad over Couscous.
Saturday: Burgers, Pasta Salad, and Sweet Corn
I think Bobby Flay would be proud of these burgers!
Sunday: Salmon with Black-Eyed Pea Salsa and Couscous
We’re on a couscous kick!
All of these dishes are versatile, simple, and delicious! They can be tweaked just a bit the next night’s dinner, and are also great lunches (the pastas and salad can be eaten cold!).
